BOK CHOY, SHANGHAI. Generally smaller than bok choy, and with pronounced bulbous stalks, Shanghai bok choy is called the “greenish- white vegetable” by the Chinese. The description is apt, for its stalks are not as white as those of bok choy and its leaves are not as deep green. If you want Shanghai bok choy, simply ask for it by
that name; the grocer will understand you. It also comes in different sizes, but its color makes it recognizable.
Shanghai bok choy is stored the same way you store regular bok choy and for the same amount of time.
